good food: peanut butter + honey granola

Life has been crazy lately. So busy. It was really nice to have a whole day yesterday with nothing to worry about except getting the dishes done and the kitchen clean. For once, I actually succeeded, and with a sparkling clean kitchen it was just too tempting not to try a new recipe out.
I found this recipe for peanut butter and honey granola, and since it's so hard for my husband and I to find a granola that we both can eat with all of our food allergies, (and we are both peanut butter junkies) I couldn't wait to try it out! The only thing I substituted is I left the vanilla out and used flax meal instead of almond meal, since B is allergic to almonds and vanilla. It turned out great! (not to mention flax meal is super good for you)
I had some today for breakfast with some french vanilla yogurt from Trader Joe's. It was oh so yummy. It turned out a little overdone (my oven likes to scorch everything) but otherwise it's perfect.
It is also so fast to make! My husband was helping me make it and we were both surprised with how quick it was to mix together and spread on a pan. I think we will be making a lot more granola from now on.

  1. I love Bobs Red Mill Almond and Honey granola :) but this recipe sounds absolutely delicious!!
